Danielle’s main goal is to provide tips on how to enjoy a healthy meal and to be a resource for information related to healthful eating on campus.  She coordinates nutrition and wellness promotions on campus, assists those who dine on campus with food allergies and special dietary needs, serves as a preceptor for the Bradley University Dietetic Internship and provides nutrition education through, seminars, monthly nutrition newsletters, taste tests and other various handouts.

A food rich in phytochemicals, which are chemicals that have been noted to have disease-fighting properties; they provide health benefits beyond vitamins and minerals.  Phytochemicals can reduce the risk of certain forms of cancer, reduce inflammation, strengthen the immune system, or in some other way contribute to a person being healthier.

During the fall season, dining services will utilize locally grown produce such as sweet corn, tomatoes, apples and root vegetables. Every week this month check out the featured local product and farmer’s biography in your dining hall.
 



 

A New Generation of Takeout Containers: Eco-TakeoutsTM NEW at Bradley University 

Starting Spring 2012 semester, the only to go option available in Geisert and Williams dining halls will be the Eco Friendly reusable containers.

 

What are Eco-Takeouts™?

 G.E.T. Enterprises, Inc. Eco-Takeouts™ is a green, environmentally-friendly alternative to disposable containers.  These reusable to-go containers are made of 100% BPA free polypropylene and can be sanitized in the dishwasher and reused again and again. 

• Microwave safe for re-heating

• Recyclable (#5)

 

How does it work?

1.) Users may purchase the Eco-Takeouts™ for $4.00 in Williams and Geisert Dining Hall (meal plan/Quickcard accepted).

2.) User consumes food outside the cafeteria.

3.) User rinses out their Eco-Takeouts™ and return it to Williams or Geisert Dining Hall to be washed and sanitized.  In exchange, user will receive a token.  You may also drop your rinsed out container in one of the Ozzi machines located in Williams and Geisert lobby in exchange for a token.  Ozzi Machine

4.) Next time you would like to take food to go in Williams or Geisert exchange your token for a clean Eco-Takeouts™.

5.) At the end of the school year return your Eco-Takeouts™ or token and be reimbursed the purchase price of $4.00.

Composting begins this semester in Geisert and Williams Dining Hall



Why Compost?

Businesses contribute 75% of all the landfill waste.  Food scraps, food-soiled paper and yard waste makes up about one-third of that total.  Removing these items from landfills reduces greenhouse gas emissions and landfill space!

Composting: How it works

Step 1
Food scraps and food-soiled papers are collected from Williams and Geisert Dining Halls

Step 2
Midwest Fiber Recycling picks up the materials and delivers them to the Illinois State University Farm

Step 3
Farm employees and ISU students mix the compostable waste with livestock manure along with leaf and yard waste from the campus and community

Step 4

The mixture is then laid out in rows where it ages into a potent fertilizer used by the university and available for purchase by commercial landscaping companies

A quick taste of Meatless Monday

 **please note: The below mentioned dining halls will offer and encourage at least one meat less option each Monday.  The entire campus will not be meat free - you will still be able to find meat based entrees in all the dining halls **

WHAT IS MEATLESS MONDAY?

An international movement to help people reduce their meat consumption by 15% to improve personal health and the health of the planet. 
 

WHY MEATLESS?

On average, Americans consume 8 ounces of meat per day – 45% more than the USDA recommends. Going meatless once a week can reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help limit your carbon footprint and save precious resources like fresh water and fossil fuel.

 

WHY MONDAY?

Multiple studies have shown that periodic health prompts lead to positive behavior change. Monday is the beginning of the week, making it the perfect time to reevaluate our choices and set our intentions for the coming days. With a Meatless Monday, you have a scheduled, recurring reminder to start your week off on a nutritious note. And if this Monday passes you by, next week is another opportunity to focus on health!

Learn More about Get Fit Stay Fit!

Get Fit Stay Fit is a new program developed collaboratively by several Bradley University Departments to challenge the Bradley University Community to become more active and make better nutritional decisions.  A point system has been created to track each individual's participation.  Participants will be able to score points by working out and attending Wellness Seminars.  Incentive items will be given for several different point levels.  This is not a competition, and it will not be necessary for individuals to be weighed or measured at any time.  This program is entirely participation based, and in most cases you will be on your own to check in and maintain your own record.

What is Balanced Choices? Provides a universal nutrition and wellness vision for all Compass Group locations across North America and was developed by a task force of dietitians, operators, chefs and marketing communications experts.  The Balanced Choices program supports the healthy lifestyle philosophy of moderation and variety.  It provides customers with the food choices they need to have a healthy diet AND the education to help them make wise food choices.

Where on campus can I find Balanced Choices food choices and educational material?  At Student Center Dining Hall you will find one Balanced Choice food selection each day.  Educational material such as monthly superfood, nutrigram, and recipe handouts will be displayed on the Balanced Choices campaign board at the entrance of Student Center Dining Hall.  You may also view Balanced Choices educational material below.

Sensible Selections





Offers entrees based on Flexitarianism (flexible vegetarianism) - eating mostly plant - based foods but occasionally eating meat, poultry and fish.  Sensible Selections encourages fruits, vegetables, grains and beans/legumes on a daily basis and offers a lean meat, poultry or fish option twice a week.

Geisert Dining Hall kitchen now has a full kosher workspace including separate preparation areas for meat and dairy products.
